Instant Pork Stout Adobo

Serves 3 hungry Mouths
Equipment: Instant Pot
Preparation: 10 Minutes
Time: 45 Minutes
½ cup Black is Beautiful stout beer
2 lbs pork belly cut into 1-½ inch cubes
5 cloves of chopped garlic
3 bay leaves
1 teaspoon of whole peppercorns
½ cup shoyu (source of salt)
½ cup sugarcane vinegar (can substitute for ¼ cup each of white and apple cider vinegars and 2 tablespoons of brown sugar)
Mango Relish (recipe below)
Instructions: Sear the pork in the Instant Pot on SAUTE setting. Once the pork browns, add the dry ingredients and cook for a minute. Add the Black is Beautiful stout, shoyu, and vinegar. Close the lid, SEALING, and pressure cook MEAT/STEW for 10 minutes on HIGH. Carefully quick-release the Instant Pot. (Refer to instructions for proper handling of Instant Pot). Render the pork for another 20 minutes. Serve with mango relish on top and enjoy with rice.
Mango Relish:
1 cup green (unripe) mango julienned
½ cup cut green onions julienned
2 teaspoons of fish sauce
2 tablespoons of rice vinegar
2 teaspoons of sugar
Instructions: Combine fish sauce, rice vinegar, and sugar. Add mixture to the cut mangos and onions and stir.
